Pajare, old stone houses guardians of simple life

Dear friends, this week we like to go off track a bit but for a good reason.

Yesterday, while I was jogging in the countryside just outside Lecce with a good friend of mine from the area, I was listening to him talking about an old “Pajara” (old stone house typical in the Salento) in the area and it sparked my enthusiasm.

He said to me: “you know, it is not far from here, you want to go?”, I said YES right away.

So, right, left, left, straight through a dense forest of Lecci (Quercus ilex) that extends for about 60 ha and about 20 minutes later there it is the “Pagliarone”, used by the farmers of Salento as a place to rest after a busy day of work or to escape a sudden storm, the pajare, often, served also as real summer homes, ideal for close monitoring, both the livestock and the most delicate crops.

Built, tendentially, conical, interlocking and overlapping stones of dimensions also very different from each other, the pajare are a real architectural gem, characterized by the peculiarity of the roof that is supported by the stones that form the side walls and by the force of gravity.

In addition, the pajare have the ability to keep the environment cool and dry, even during the hottest hours and in the presence of torrid and intense temperatures.

I could not resist and I had to climb up to the roof from the exterior stone steps and once up there, the feeling of peace, infinity, and serenity immediately took over. It was luxury!!! The green sneaker you see in one of the pictures is mine, proof of that special moment I experienced.

Partying Snails – The Sagra of the Munnicchedda in Cannole (LE)

Last week, we listed all the August events in Salento, we left you with a bit of mystery about one of the most important summer holidays in the hinterland of Lecce.

We are talking about an event of great resonance (the small village in question can accommodate up to 70,000 people), which starts from a tiny being, but extremely cute: the Munnichedda?

Right, maybe the slang name does not tell you anything … Okay, how about snails?

Yes, that’s right, in Cannole (LE) between August 10th and 13th is the Munnicchedda Festival, the snail festival.

Maybe for someone, the idea of ​​eating small crawling animals is not very exciting, yet the snail, the one from Cannole has a truly unique and inviting flavor.

The dishes based on this delicious gastropod were already known in pre-Christian times. Hesiod called the snails “portacasa (house-carrier)”, perfect name if we think that these animals actually carry their shell everywhere.

There are about 4000 species in the world of snails, not all edible. In Italy, there are about 400 species, of which only 15 can be eaten. The best known in the gastronomic field is perhaps the French escargot, a large snail seasoned, cooked and sold in the finest restaurants across the Alps.

The Cannole snail is much smaller, it has a delicate and tasty meat. According to folk medicine, it is believed the consumption of snails has powerful digestive benefits: it is believed “the more you eat, the more you digest,”.

To find out if all this is true, just go to Cannole next weekend. You will not only find the snails: there are many events that animate the town. Concerts, Dj Set, gastronomic tastings of typical Salento dishes and a lot of pizzica, to go wild until dawn.

Enogastronomy and Festivals: July of flavors in Salento

When this blog was born, our goal was to tell you about Salento from various points of view. This land is a discovery after another and therefore it is almost impossible not to talk about something new every Thursday.

Living the Salento, in summer but also throughout the year, means to mix with all that this territory offers and fall in love with it.

Undoubtedly, one of the main reasons that push the tourist to choose the Salento peninsula as a holiday destination is its food and wine.

Simple and authentic flavors, good wine and fresh fruit: these are the ingredients that ensure Salento and Puglia a place in the top 10 of Italian food and wine destinations.

A whim for every curl (sea-curls=sea-urchins)

Since we started talking about Salento and its beauty, it has not been possible not to refer to the sea as its primary resource.

We have exalted its color and its impalpable and crystalline transparency, we have recounted the physical shape of the beaches on which it pours in the days of high tide and we have appreciated the scent in the morning.

It is right to admit that what makes the Salento sea perfect are also the delicacies that gives us, first of all the delicious sea urchins.

Sea urchins, or echinoides, are common both in the oceans and in the Mediterranean Sea and prefer the rocky seabed as a habitat. They are very delicious for their intense and decisive taste.

But be careful, they are a protected species, to be consumed only during the periods established by the maritime authorities.

The best time is the month of July: the fishermen leave early in the morning to catch them.

The fishing of the sea urchins is a physical, emotional activity: you dive and manually extract the precious mollusks from the rock to which they are entwined.

Eating them is definitely easier. Just a nice slice of bread and a nice glass of accompanying white wine. You can buy them from the many kiosks that are on the coast from Otranto to Gallipoli, passing through the most beautiful beaches of Salento.

The ideal would be to go to the beach early, wait for the return of the fishermen, stock up on sea urchins, and bring them home, maybe in one of the luxury villas where you stay, to eat them for lunch with your family and your friends.

And for those looking for more refined and complex flavors, many restaurants offer dishes based on sea urchins, such as the famous linguine, always accompanied by a good white wine.

The sea urchin is one of the symbols of Salento and all of Puglia in general: do not be surprised then if around the souvenirs shops you will also find magnets that reproduce the cute spiny mollusk.
